Abadía da Cova Xuno Mencia Barrica Estate Wine

Manually-selected bunch by bunch 30-40 year old Mencia on south-east facing terraces at 45-70% gradients on small plots, A Seara, A Ugrexa y Brinco. Soils are schist, slate and granite with variation levels in silt, sand and clay. At 310-430m above sea level, vines are trained on trellises, simple cordon, double cordon and traditional system, with Royat and simple Guyot pruning. The density of the planting is 3100-4700 vines per hectare with manual harvesting in boxes of 18 kg. Carlos, Roberto, Manuel and Fernando are the heroes in ensuring the vines reach a perfect maturation, vintage after vintage. Destemmed, pressed and fermented in small 4000-7000 litre troncoconic French oak barrels. Later it is aged on its lees in finely toasted French, American and Central European 400 litre oak barrels with battonage over lees for 6 months. A natural filtration occurs through decanting without any clarification or the use of chemical or mechanical elements to preserve its natural characteristics. It can produce some precipitate in bottle that does not alter its qualities.  Opaque, deep cherry red garnet, clean and brilliant with ruby edges. Complex, intense bouquet, mineral with ripe, black and red fruits, shades of coffee, tobacco and herbal mountain. The palate is complex, initially fresh and youthful but then more elegant, complex and unctuous with delicate flavours of violets, black cherries, liquorice, toastiness, cassis, mature tannins. Elegant finish with lengthy persistence. Limited production: 19600 bottles. 14% abv.
